My-Kin: Well, to attract more reader you need to at least make people understand what your thinking style and be able to follow it. Also language is also important. You cannot write bad English/Swedish or whatever you are using and expecting people to understand it when the language is your first or second language.

Food Spotlight: Waldorf Salad with beans

This recipe I got from my book Food and life style with diabetes and obesity written by K. Engstrom, M Engstrom and A.L Stenudd. Before I post this recipe I shall tell you what a Waldorf salad is.

Waldorf salad contains fine sliced apple and celery, chopped walnuts and mayonnaise. The creator of the dish is a discussable topic but the common thing in the story was created at Waldorf hotel 1893 in New York City.



Waldorf Salad with beans




You need:
1.2 cup/300 gram shredded celery
1 orange pepper/capsicum

1 red apple
0.4 cup/100 gram walnuts
1 can of large white beans
0.4 cup/100 gram pineapple pieces(unsweetened)

Sauce:
0.6 cup/150 gram soy cream/oat cream/ light créme fraiche
1 spoon of lime or lemon juice
0.4 cup/100 gram chopped lemon balm(citronmeliss in Swedish)
0.5 teaspoon salt
Some pepper
20 grapes

Boil the shredded celery for 3 minutes, pour the water away. Cut the pepper and the apple in small squared pieces. Chop the walnuts into large pieces. Mix the pepper, apple, celery and walnuts with beans and pineapple.

Make the sauce with
soy cream/oat cream/ light créme fraiche, lemon/lime juice, lemon balm and salt and pepper. Pour the sauce over the bean salad and stir carefully. Split the grapes into halves and serve with the salad.
